Ingredients
To make a flavorful Moroccan Harira, you will need:
- Protein: 200g of beef or lamb (optional)
- Legumes: ½ cup lentils, ½ cup soaked chickpeas
- Vegetables: 4 ripe tomatoes, 1 onion, 3 stalks of celery, ½ bunch of fresh parsley, ½ bunch of fresh cilantro
- Spices: 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon turmeric, 1 teaspoon ground ginger, ½ teaspoon cinnamon
- Additional Ingredients: 3 tablespoons tomato paste, 2 tablespoons olive oil, 1 cup flour (to thicken), 1 liter water, 1 liter broth (chicken or beef), 1 egg (optional)
Instructions
Step 1: Prepare the Base
1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and meat (if using), and sauté until lightly browned.
3. Stir in the spices: salt, pepper, turmeric, ginger, and cinnamon.
Step 2: Add Vegetables and Legumes
4. Blend the tomatoes until smooth and add them to the pot.
5. Stir in the tomato paste for a richer color and taste.
6. Add the chopped celery, parsley, and cilantro.
7. Mix in the soaked chickpeas and lentils.
Step 3: Simmer the Soup
8. Pour in the broth and water, then bring to a boil.
9. Reduce heat and let it simmer for about 45 minutes to 1 hour, stirring occasionally.
Step 4: Thicken the Soup
10. In a separate bowl, mix flour with water to form a smooth liquid.
11. Slowly pour the flour mixture into the soup, stirring continuously to avoid lumps.
Step 5: Final Touches
12. Let the soup simmer for another 15–20 minutes until it thickens.
13. If using, beat one egg and stir it into the soup for extra richness.
Serving Moroccan Harira
Serve Harira hot with dates, lemon wedges, and crusty bread. It is the perfect dish to enjoy during Ramadan, as it provides essential nutrients and energy after a day of fasting.
